Caroline Latrive is the chef de cave of located in Ay, France. Ayala’s haute couture dry blends are crafted by one of the few female cellar masters in Champagne.

I have this passion for Chardonnay, this grape variety charms me with all its facets. It always surprises me with all its tones of expression: from austerity to generosity, from greed to refinement, so much varied expressions from one cru to the other, to its beautiful aromatic complexity.
